Avocado Egg Salad

This was super yummy! Super easy!

Ingredients:

  • 4 hard-boiled eggs
  • 1 large avocado, cubed
  • 2 tablespoons mayonnaise or alternative (Veganaise)
  • 1 teaspoon curry or powder
  • Pinch of salt and pepper

Just combine all the ingredients in a large bowl and mash together with a fork. Adjust the salt/pepper/mayo to your tastes. Then slap between two slices of bread or in a wrap and enjoy!

If there is something different you usually use to make your regular egg salad, I’m sure you can adjust the recipe.
